Absinthe Verte

Outlawed for a century after rumors of hallucinogenic properties, Absinthe is making a comeback. Tree Spirits is proud to be the first New England distiller of the Green Fairy. Using a recipe from the 1800s, our unaged Applejack is re-distilled with grand wormwood, fennel and anise, then colored with an infusion of petite wormwood, lemon balm and hyssop.  In 2014, Tree Spirits Absinthe Verte was awarded a Bronze medal at the 2014 World Spirits Competition in New York and in 2016 it was Down East Magazine’s Editor’s Choice!


Drink Recipes

Try it as it was originally served:

1 oz Absinthe
1 sugar cube
3-5 oz ice cold water
With the Absinthe in a glass,
place an Absinthe spoon on top
the sugar cube on top of the
spoon and slowly pour the
water over til it suits your taste.

Then, there is a Sazerac, considered by some to be the oldest American cocktail.

Or, try Death in the Afternoon,
the drink made famous by
Ernest Hemingway.

Pour an ounce of Absinth in a
champagne glass and top with
ice cold champagne.  Or reverse
the order and watch the Absinthe
float for a minute.

Here are two of our favorites:

A Fiery Fairy
Serve in a tall glass
1 oz Tree Spirits Absinthe
Maine Root ginger beer
Fresh mint
Pour a measure of absinthe and muddle a sprig of mint
with the absinthe. Add ice and top with ginger beer.
Garnish with a sprig of mint and slice of ginger if desired.

The Root of All Evil
Serve in a rocks glass
1 oz Tree Spirits Absinthe
2 oz Maine Root root beer
Pour over ice, add root beer and watch it louche or stir
gently ’til cloudy.

1 oz Absinthe
3 dashes benedictine herbal liqueur
2 dashes bitters
1 oz water

Shake well with cracked ice. Strain into cocktail glass.

Absinthe Curacao Frappe recipe

1 oz Absinthe
1/2 oz Curacao orange liqueur
1 tsp lemon juice
2 tsp orange juice
1 slice orange

Stir ingredients and pour over crushed ice in a deep-saucer champagne glass. Add an orange slice.

Serve in: Champagne Saucer

Absinthe Flip recipe

1/2 oz Absinthe
1/2 oz Cointreau® orange liqueur
2 tsp lemon juice
1 egg
1 tsp sugar

Shake ingredients well with ice. Strain into a prechilled Delmonico glass. Sprinkle nutmeg on top.

Serve in: Sour Glass

Properly chill 1 cocktail glass. In mixing glass with ice, pour gin and absinthe, and stir. In your cocktail glass, roll 1/2 oz of dry vermouth and throw away the excess. Strain other ingredients into cocktail glass and float 1/2 oz of grand marnier over top. Garnish with orange peel.

Serve in: Cocktail Glass

Absinthe Suissesse recipe

1 1/2 oz Absinthe
2 – 3 drops anisette
2 – 3 drops orange flower water
1 tsp white creme de menthe
1 egg white

Shake with ice and strain into a cocktail glass.

Green Fairy recipe

1 oz Absinthe
1 oz water
juice of 1 lemons
2 tsp egg white
1 dash Angostura® bitters

Shake thoroughly with ice and strain into a cocktail glass.

Serve in: Cocktail Glass

London Fog #2 recipe

1 1/2 oz gin
1/4 oz Absinthe
Frappe in a highball glass.

Serve in: Highball Glass

Sea Fizz recipe

1 1/2 oz Absinthe
1 tbsp lemon juice
1 tsp sugar
1 egg white
soda water

Shake with ice and strain into a highball glass and fill with seltzer.

Serve in: Highball Glass
