By the mid-1800s rum made from Caribbean molasses had under-priced New England-made applejack, and the popular apple spirit almost disappeared. Recently, a number of micro-distilleries in New Engalnd and New York have resumed production. Tree Spirits Applejack is barrel aged for 6 weeks, which gives it a beautiful golden color.
